Oyster Omelet (Or Luak)

4 tbsp vegetable oil
3tbsp tapioca flour
2 tbsp rice flour
3/4 cup water
4 eggs
2 garlic cloves, minced
2 tbsp fish sauce
8 Fresh oysters ( you can add more if you want )
Spring onions or corrainder leaves

1. Heat 4 tbsp oil in the frying pan to high heat. Mix the flour with water. Pour flour mixture into the pan Cook for 30 seconds to let some crust form on the underside.
2. Break four eggs over the flour mixture. Spread the eggs withouth breaking the flour “pancake” underneath. Using the edge of a spatula, divide the mixture into 3 or 4 pieces, and turnover each piece separately. Cook until egg is slightly crispy.
3. Make space in the center of cooking surface by pushing aside the omelet. Pour 1 tbsp of oil , then the garlic. Add oysters. Cook for about 20 seconds. Pour the fish sauce, Then break up the omelet and mix the the oysters. Serve with corrainder leaves or spring onions.

For chilli, I use the normal chilli sauce and add some vinegar to it !
